Winning Certified Angus Beef recipe: Flank steak with tomato juice and cilantro

Certified Angus Beef put a call out this month for the best grilling recipe, and Wyandotte resident Jon Lynch's recipe for flank steak emerged as the winner. You can see Ben Bailey and Tina Miller from Meijer make the recipe during the broadcast of the Ford Fireworks.

Grilled Flank Steak

2-3 lb. flank steak
16 oz.  tomato  juice
3 tbls. Fresh chopped cilantro
3 garlic cloves – chopped fine
½ tsp. cumin
¼ tsp sea salt
¼ tsp freshly ground pepper
½ lime -  juice freshly squeezed

Combine all ingredients into a plastic bag, and marinate over night.
Prepare grill with high heat to sear meat.
Remove meat and put marinate into small pot on low heat, stirring occasionally.
Place meat on grill for approx. 2 mins., Pinch of salt and pepper, then move meat ½ turn to get nice grill marks.
After 3 minutes flip meat over. Pinch of salt and pepper, and remove after 5 mins for medium rare. Or cook longer for desired doneness, but medium rare is best.
Remove meat and let rest for 5 mins.
Place on cutting board and cut thin slices across the grain. Arrange slices on platter and pour contents on pot (marinade) over meat.
