Game day grub for Super Bowl XLVIII

Super Bowl Sunday is right around the corner, which means plenty of friends, food, football and drinks!

Only the best snacks will make it around the tailgate (or the TV) during your Super Bowl bash and Hard Rock Cafe has the perfect crowd-pleasing bites that will be sure to score big points with your guests as they cheer on their favorite team.

Rock N' Roll Shrimp

4 Shrimp, cut in half

½ ounce Seasoned Flour

2 ounces Buttermilk Egg wash

2 ounces Spicy Remoulade

 

Cover shrimp with egg wash, then flour and fry in 350°F fryer for 90 seconds or until crispy. Serve with remoulade sauce.

 

Pork Wings

5 Pork Pig Wings

2 ounces BBQ sauce

 

Fry pork wings in 350°F fryer and cook for 1½ to 2 minutes or until browned. Remove and drain well. Toss with BBQ sauce and place on broiler until grill marks are achieved.

 

Blue Cheese Chips

8 ounces Chips

2 ounces Blue cheese dressing

2 TBS Bacon, chopped

1 TBS Green onions

1 TBS Blue Cheese Crumbles

¼ Wing sauce

¼ ounces Balsamic glaze

 

Evenly spread chips over plate, ladle dressing over the chips, sprinkle blue cheese crumbles, sprinkle chopped bacon and repeat each layer. Cook in microwave for 10 seconds, then again for 10 additional seconds. Sprinkle chopped green onions, wing sauce and balsamic glaze.

 

Mac & Cheese Bites

5 Mac bites

2 ounces Thai Ketchup

 

Place mac and cheese bites into a 350°F fryer for 2 to 3 minutes or until golden brown in color, and drain well. Serve with Thai ketchup.

 

Pulled Pork Sandwiches

1 Brioche Bun, toasted

6 ounces Pulled Pork

2 ounces BBQ sauce

 

Cook pulled pork in microwave for 30 to 45 seconds or until internal temperature of 165°F is reached. Place meat on top of bun, and ladle BBQ sauce over meat.

 

Magical Mystery Mojito

¾ oz. Monin Cucumber Syrup

8 - 10 Mint Leaves (depending on size)

1½ oz. Hendrick's Gin

½ oz. St Germaine Elderflower Liqueur

1 oz. Lime Juice

Splash Sierra Mist

Garnish: Mint sprig and Cucumber Spear

 

Muddle mint and cucumber syrup. Add gin, elderflower and lime juice and shake with ice. Pour into glass then top with Sierra Mist, mint sprig and cucumber spear.

 

Red Berry Press

3 Lemon Wedge

3 Strawberries (hulled & sliced)

3 Fresh Raspberries

2 oz. Svedka Clementine Vodka

5 oz. HRC Lemonade

5 oz. Lemon-Lime Soda

 

Add all ingredients to the French press. Insert depressor and lid. Slowly press depressor to the bottom of French press to smash fruit. Pour into glass with ice.

 

Raspberry Mint Lemonade

3 Fresh Raspberries

3 Fresh Blueberries

4 Mint Leaves

1 oz. Simple Syrup

1 oz. Smirnoff Raspberry Twist Vodka

½ oz. Beefeater Gin

½ oz. St Germaine Elderflower Liqueur

1 oz. Lemon Juice

Splash Lemon-Lime Soda

Garnish: Lemon wedge and mint sprig

 

Muddle fruit with mint and simple syrup. Add liquor and lemon juice. Shake and strain over fresh ice. Top with lemon-lime and garnish with lemon wedge and mint sprig.
