D'Licious Orange Blueberry Oatmeal Muffins

These muffins are a perfect on-the-go treat or hearty enough to bring to your next family gathering.  They’re packed with blueberries, freshly squeezed orange juice, and a full cup of oats to help you make it to lunchtime without snacking.  And they only contain a half cup of sugar in 24 muffins.

Orange Blueberry Oatmeal Muffins

  • 3 Cups Flour
  • 1 Cup Oats
  • ½ Cup Sugar
  • 4 tsp. Baking Powder
  • 1 tsp. Salt
  • ½ tsp. Baking Soda
  • 1 Cup Oil
  • Zest of 1 Orange
  • 1 Cup Orange Juice (Freshly Squeezed works the best)
  • 3 Eggs
  • 3 Cups Blueberries

Directions

  • Preheat Oven to 375 degrees
  • In a Large bowl Mix the dry ingredients of Flour, Baking Powder, Salt, Baking Soda, Oatmeal, and Sugar together
  • In another large bowl, Mix the wet ingredients of Oil, Orange Zest, Orange Juice, and Eggs together
  • Mix the Dry ingredients with the wet ingredients
  • Add in the 3 Cups of Blueberries
  • Mix everything together
  • Add batter lined muffin tins, the tins should be filled quite full
  • Before putting muffins in oven sprinkle a cinnamon and sugar mixture on top
  • Bake for 20 minutes or until golden brown

 

*For a version with less fat and less sugar, eliminate the sugar and the oil from the recipe and instead add 1 cup of unsweetened applesauce to the mix.
