These muffins are a perfect on-the-go treat or hearty enough to bring to your next family gathering.  They’re packed with blueberries, freshly squeezed orange juice, and a full cup of oats to help you make it to lunchtime without snacking.  And they only contain a half cup of sugar in 24 muffins.

Orange Blueberry Oatmeal Muffins
- 3 Cups Flour
- 1 Cup Oats
- ½ Cup Sugar
- 4 tsp. Baking Powder
- 1 tsp. Salt
- ½ tsp. Baking Soda
- 1 Cup Oil
- Zest of 1 Orange
- 1 Cup Orange Juice (Freshly Squeezed works the best)
- 3 Eggs
- 3 Cups Blueberries
Directions
- Preheat Oven to 375 degrees
- In a Large bowl Mix the dry ingredients of Flour, Baking Powder, Salt, Baking Soda, Oatmeal, and Sugar together
- In another large bowl, Mix the wet ingredients of Oil, Orange Zest, Orange Juice, and Eggs together
- Mix the Dry ingredients with the wet ingredients
- Add in the 3 Cups of Blueberries
- Mix everything together
- Add batter lined muffin tins, the tins should be filled quite full
- Before putting muffins in oven sprinkle a cinnamon and sugar mixture on top
- Bake for 20 minutes or until golden brown

*For a version with less fat and less sugar, eliminate the sugar and the oil from the recipe and instead add 1 cup of unsweetened applesauce to the mix.
