Irish treat: Corned beef, cabbage and apple skillet

Corned Beef, Cabbage and Apple Skillet
Serves 4

Ingredients:
1 tsp. Meijer Olive Oil
1 small onion, thinly sliced
1½ cups Meijer Naturals Chicken Broth
1½ medium heads cabbage, sliced (about 1½ lbs.)
2 Granny Smith apples, peeled, cored and chopped
1 large carrot, cut into short, thin strips
1/4 tsp. McCormick dried thyme
1 lb. sliced cooked corned beef


Directions:
1. In a large skillet heat oil over medium-high heat. Add onion; cook 5 minutes or until softened.
2. Add broth; bring to boiling. Add cabbage, apples and carrot. Reduce heat; cover and simmer 10 to 12 minutes or until cabbage is almost tender. Stir in thyme.
3. Place corned beef slices on top of cabbage mixture; cover and simmer 5 minutes or until heated through.

Grilled Reuben Sandwiches
Serves 4
2 Tbsp. Promise® margarine
8 slices Meijer Deli marble rye bread
1/4 cup Bolthouse® Farms Thousand Island Yogurt Dressing (in produce section)
1 lb. thinly sliced corned beef from the Meijer Deli
3/4 cup Claussen Sauerkraut, drained
4 slices Kraft Deli Fresh Swiss Cheese Slice
Directions:

  • Lightly spread one side of each piece of bread with Promise margarine.
  • Spread 4 of the bread slices (without the Promise margarine) with Thousand Island dressing.
  • Fill bread slices with remaining ingredients. Top with the remaining bread slice, margarine side out.
  • Place in a pre-heated skillet over medium heat and cook 3-4 minutes on each side or until golden brown on both sides.
  • Enjoy with Dole Salad and fresh berries for dessert.

    Luscious Lime Bars
    Serves 9
    Ingredients:
    Crust:
    1 cup Meijer white whole-wheat flour
    1/3 cup Meijer confectioners' sugar
    3 Tbsp. Meijer cornstarch
    1/4 tsp. salt
    3 Tbsp. Meijer canola oil
    2 Tbsp. butter, softened
    Filling:
    1/2 cup Meijer granulated sugar
    3 Tbsp. Meijer cornstarch
    1/4 tsp. Meijer baking powder
    1/4 tsp. salt
    2 large Meijer eggs
    2/3 cup water
    1/3 cup lime juice
    3-4 drops McCormick green food coloring, if desired
    Directions:

  • Make the crust: Preheat oven to 350 degrees. Line an 8-inch pan with parchment paper or foil and spray with cooking spray. Combine flour, confectioners' sugar, cornstarch and salt in a medium bowl. Add oil and butter; using clean hands, use your fingertips to blend the flour mixture until evenly combined. Mixture will be crumbly. Firmly press dough into the prepared pan. Bake until just barely beginning to brown, about 15 to 20 minutes.
  • Make the filling: In a medium bowl combine granulated sugar, cornstarch, baking powder and salt. Add eggs and whisk until well combined. Stir in water and lime juice (and food coloring if desired) and whisk until well combined. Pour filling into warm crust and bake until just set, 15 to 20 minutes (center will be a bit jiggly). Let cool to room temperature on wire rack (about 1 1/2 hours). Carefully grab foil (parchment paper) and lift out of pan. Cut into 9 squares. Garnish with Lime zest and mint sprigs if desired. Dust lightly with confectioners' sugar and serve.
