Angel Hair Pasta with Garlic Shrimp and Broccoli

Serves 6

Simple switches like using whole wheat pasta instead of refined and olive oil instead of butter make it easy to "trade-up" this quick dinner.

Ingredients:

 

1 (12 ounce) package Meijer whole wheat angel hair pasta (NuVal™ Score 91)

 

1 tub (10 oz.) Philadelphia Reduced Fat Savory Garlic Cooking Crème

 

 1/2 (16 ounce) package Meijer frozen broccoli florets, thawed (NuVal™ Score 100)

 

1 tablespoon extra-virgin olive oil (NuVal™ Score 11)

 

 1 pound jumbo shrimp, peeled and deveined (NuVal™ Score 71)

 

 3 cloves garlic, minced (NuVal™ Score 91)

 

 

Directions:

 

1)  Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.

 

2) Meanwhile, place broccoli in a steamer over 1 inch of boiling water, and cover. Cook until tender but still firm, about 2 to 6 minutes. Drain.

 

3) In a large skillet. Saute shrimp and garlic in olive oil for 5 minutes, or until shrimp are pink.

 

4) In a large bowl, toss pasta, shrimp and broccoli; stir in cooking creme and serve.

Nutrition Notes:  Using olive oil, with a score of 11, instead of butter, which scores a 2, increases the amount of heart healthy fats in this dish while the whole wheat pasta pumps up the fiber!
