Cilantro rice is a popular accompaniment at popular restaurants. Here's a recipe that so easy to make you might want to try it at home.
2 tablespoons vegetable oil
1/2 cup chopped cilantro
2 limes juiced
1 1/2 teaspoons salt
2 cups long grain white rice or basmati
4 cups water
1/2 cup finely chopped onion
4 cloves finely chopped garlic
In a pot with a tight-fitting lid, saute the chopped onion until translucent. Add garlic and saute another 2-3 minutes longer. Add rice, water and bring to a boil.
When the water begins to boil, turn the heat down to low.
Simmer, covered 15-20 minutes or until water is absorbed.
Turn off the heat, leave covered for 15-20 minutes.
Mix salt and lime juice together until salt dissolves.
Pour mixture over the rice then add cilantro and toss well to evenly coat. Let sit 10 minutes before serving to allow flavors to blend.
