'All About Apples' recipes

It's apple season in Michigan!

Here are some recipes that will bring the flavor of fall into your home.

Apple Cinnamon Baked Oatmeal Cups

Makes 12 oatmeal cups

Ingredients:

2 cups old fashioned oats (use certified GF if needed)

1 teaspoon baking powder

1/8 teaspoon salt

1/2 teaspoon cinnamon

1 cup milk (I used unsweetened coconut milk, but dairy or other milks will work, too)

1 egg

1/2 cup mashed banana (about 1 1/2 medium bananas)

1 large apple, peeled, cored, and diced

Directions:

1. If you plan to bake these right away, preheat your oven to 375 degrees.  If not, that part can wait until the morning.

2. In a large bowl, combine the oats, baking powder, salt, and cinnamon.  Add the milk, egg, and mashed banana and mix until combined.  Stir in the apple.

3. You can either put the mixture into the fridge overnight or continue with the directions and bake right away.

4. Grease a muffin tin and fill each cup with the oatmeal mixture to just about the top.  Bake in a 375 degree oven for 20-25 minutes, until the cups are set.  Store in the fridge or these can also be frozen.  Enjoy!

Recipe Notes:  Because I knew I was making these for my 9 month old son, I only used 1/8 teaspoon salt and 1/2 teaspoon cinnamon.  If you are not making these for a baby and you prefer a stronger cinnamon flavor, increase the salt to 1/4 or 1/2 teaspoon and cinnamon to 1 teaspoon.  

 

Sage and Apple Turkey Burgers

Yield: 6 burgers

Ingredients

1 lb (454 grams) lean ground turkey

1/3 cup grated apple

1/3 cup grated onion

1/2 cup grated zucchini (I had some previously shredded and frozen. I thawed and squeezed out excess water)

1/4 tsp salt

1/4 tsp pepper

1 Tbsp fresh sage leaves, chopped

 

Directions

1. Mix together all the ingredients (clean hands work best). Mixture will be quite wet.

2. Loosely form into 6 burgers.

3. Heat your large skillet over medium heat. Once hot, mist with cooking spray.

4. Place burgers in the pan and flatten out. Cook approx. 4 min on each side until golden and cooked through.

5. Serve with or without a bun.

 

Baked Apple Chips

Ingredients:

3 apples (I use Granny Smith, Pink Lady, or Honey Crisp)

ground cinnamon

granulated sugar

Directions:

1. Preheat oven to 200F degrees. Line two large baking sheets with silicone baking mats. Set aside.

2. Wash and thinly slice the apples as shown in the photos above. Spread the apple slices onto the baking pans making 1 single layer. Sprinkle with cinnamon and sugar.

3. Bake for 1 hour, flip the apples over, and bake for another 1-1.5 hours. Turn the oven off and keep the apples inside as the oven cools down for 1 hour. This will help them get crunchy. Some apples may just be chewy and only slightly crunchy after 3 hours in the oven. Store apple chips at room temperature in an airtight container for up to 1 week.

 

Tuna Apple Walnut Salad

Ingredients

1 large (or 2 small) cans albacore tuna canned in water

1/2 cup or more olive oil mayonnaise

2-3 tbsp dill weed

1-2 tbsp honey (optional)

1 apple, chopped into small pieces

1 rib celery, chopped into small pieces

3/4 cup walnuts, chopped

salt, pepper and garlic to taste

 

Directions

1. Drain tuna and empty into medium sized bowl

2. Add mayo, apples, celery, dill, honey, walnuts and other spices and mix well.

3. Serve over large bed of spinach and lettuce.
