Bell Pepper and Tomato Relish

Ingredients:

2 cup                  Mixed bell peppers, small dice

2 cup                  Tomatoes, small dice

1/2 cup                  Minced Green onions

1 clove                Garlic, minced

2 Tbls.                Fresh basil pesto

2/3 cup                  Olive oil

1/3 cup                  Balsamic Vinegar

As needed                   Salt and pepper to taste

 

Method:

Mix all ingredients together, allow flavors to develop overnight.

Serve chilled on warm toasted crostini or serve warm on the chicken and pesto pasta as well as the portabella mushrooms.

Meatball Recipe

Ingredients:

1 pound              Ground beef or turkey

1 pound              Ground pork shoulder

2 each                 Whole eggs

5 ounces             Milk

½ cup                  Grated parmesan cheese

1  cup                  Breadcrumbs

2  Tbls.                Fresh chopped parsley

2  teas.                 Salt

2  teas.                 Pepper

 

Method:

Mix the meats together by hand in a mixing bowl keeping well chilled.

In separate bowl, mix the eggs, milk, parmesan and breadcrumbs together.

Combine the two mixtures and add the parsley, salt and pepper.

Mix until well combined and keep refrigerated.

Portion into the desired size, anything from 1-3 ounces.

Brown either in heavy bottom skillet or under the broiler.

Finish in a 350 F oven until cooked to 155 F on a digital thermometer.

Reserve for multiple uses.

 

Chilled Gazpacho

Ingredients:

2 cups                 Beef stock

2 cups                 Tomato Juice

2 cloves              Garlic, minced

1/2 cup                  Green onions, diced fine

1/2 cup                  Red bell peppers, small dice

1/2 cup                  Yellow bell peppers, small dice

1/2 cup                  Green bell peppers, small dice

1/2 cup                  Celery hearts, small dice

3/4 cup                  Cucumbers, peeled small dice

3/4 cup                  Tomato concasse'

1/3 cup                  Olive oil. extra virgin

3   Tbs                  Balsamic or red wine vinegar

 

as needed                    Salt and Pepper to taste

Few Dashes                 Lee and Perrins Worcestershire sauce

Few Dashes                 Tabasco sauce

1 Tbs                  Caraway seeds, roasted and ground

 

Garnish  Avocado balls, celery hearts or cucumber sorbet with cilantro

 

Method:

Mix all soup ingredients thoroughly and chill. Garnish appropriately.

 

Chilled Tomato Soup with Orange and Fresh Tarragon

 

Ingredients:

 

2          cups                 Chicken Stock, cold

2          cups                 Tomato Juice

1          cup                  Tomato concasse'

Juice of                        2 or 3 fresh oranges

2          Tbs                  Freshly chopped french tarragon

As needed                   Salt and fresh ground pepper

few drops                    Tabasco

 

Garnish:  Avocado balls

 

Method:          Mix all ingredients together and chill. Garnish appropriately.
