Turkey Taco Chili

Serves 6-8

Ingredients:

1 pkg. (20 oz.) Jennie-O Lean Ground Turkey

1/2 cup chopped sweet onion

2 (15.25 oz.) cans Meijer reduced sodium black beans, drained

2 (14.5 oz.) cans diced tomatoes with green chilis – do not drain

1 (15 oz.) can Meijer corn, drained

2/3 cup water

1 (1 oz.) pkg. reduced sodium taco seasoning

1 Tbsp. McCormick Chili powder

1 Tbsp. cornstarch

Optional toppings:  2% Milk shredded cheddar cheese, low fat sour cream or plain Greek yogurt, diced green onion, crushed tortilla chips

Directions:

1. Brown ground turkey with onions in skillet over medium heat until cooked through (lightly season with salt and pepper).  Transfer to slow cooker.

2.Add drained beans, diced tomatoes, corn and water and mix well.  Add taco seasoning.  Mix chili powder and corn starch, add to pot and mix until well blended.

3. Cover and cook on low 6 or more hours.  Serve with optional toppings.

4. Optional cooking method:  Brown turkey and onions in a stock pot or Dutch oven.  Add remaining ingredients and mix well. Bring to a boil, reduce heat to simmer and let cook an additional 30-60 minutes to allow flavors to blend.

Serve with a side green salad and, if desired, additional tortilla chips for scooping chili.
