During the past two years, as part of the Healthy, Hunger-Free Kids Act, the U.S. Department of Agriculture has implemented strict guidelines in an effort to make school lunches healthier.
Locally, Plum Market is working with Detroit County Day School to plan out school meals that are both delicious and yummy.
Plum Market has shared one of their healthy kids meal recipe with Live in the D: Tacos!
Bean & Rice Taco Filling
1 Cup Brown Rice Cooked (May Substitute Quinoa or Your Favorite Grain)
2 Tablespoons Vegetable Oil
Red Onion Sliced
Yellow Pepper Thinly Sliced Lengthwise
Red Pepper Thinly Sliced Lengthwise
Green Pepper Thinly Sliced Lengthwise
1 Cup Corn Fresh, or Thawed and Drained if Frozen
3T Taco Seasoning (See Recipe)
1 Jalapeno Pepper Diced (Optional)
1 Clove Garlic Minced
16oz. Can Black Beans, Drained
16oz. Can Pinto Beans, Drained
Method:
In a 12" sauté pan, heat oil until shimmering. Add onions and sauté until translucent. Add corn, red, green, yellow, and jalapeno peppers and continue to cook until tender, about 5 minutes.
Add garlic and taco seasoning mix and cook, stirring, for about one minute.
Add drained beans and cook, stirring, until warm, about five minutes.
Mix the cooked beans and peppers with cooked rice. Serve in warm tortilla shells.

Turkey Taco Filling
2 T Vegetable Oil
1 lb Ground All-Natural Turkey
Yellow Onion, Sliced
1 T Garlic Minced
3 T Taco Seasoning
1 T Tabasco Sauce
1 T Worcestershire Sauce
ó Lime, Juiced
Method:
1. In a 12" sauté pan, heat oil until shimmering. Add onions and cook until translucent. Add garlic
and cook, stirring, for one minute, then add taco seasoning and cook one minute more.
2. Add ground turkey, Tabasco and Worcestershire sauce, and cook, stirring to break up, until
cooked through and no longer pink, about 10 minutes.
3. Add fresh lime juice and stir until combined.
4. Serve in warmed taco shells or tortillas.

Taco Spice Blend
Cup Kosher Salt
4 T Whole Coriander
1 T Whole Cumin
1 T Leaf Oregano
4 T Dark Chili Powder
2 T Black Peppercorns
2 T Smoked Paprika
3 T Granulated Garlic
ó Teaspoon Red Chili Flakes
Method:
Place all ingredients into a clean spice grinder and process until combined. Store in an
airtight container for up to one year.
