Tasty Tuesday: Recipes for leftover turkey

Author Joan Legro Bushnell was featured on Local 4's Tasty Tuesday sharing recipes from her book "Gobble It up!"

Here are some featured recipes:

Leftover sweet potato cookies

1 c leftover sweet potato or yam, mashed

(or 1 med sweet potato or yam, baked & mashed)

1/3 c orange juice (1 orange)

2 T butter, melted

¼ t vanilla

1 pkg gingerbread mix

About 3 doz halved pecans

Preheat oven to375F (190C)

Mash juice, butter & vanilla into potato until smooth.

Combine with gingerbread mix to form soft batter.

Form into small balls & roll in sugar if desired.

Place on ungreased cookie sheet & flatten slightly by pressing pecan in center.

Bake 8-10 min.

Makes about 3 dozen. 

Tortilla bean pie

1 pkg corn tortillas*

2 c cooked turkey, shredded

1 can diced tomatoes & liquid mixed with 1 T gr cumin

2 cans red kidney beans**

1 lg onion, chopped

1 T chopped Jalapeno pepper (opt)

1 c shredded cheddar cheese

1 small can ripe olives

Sour cream & salsa

 

Lightly grease bottom of round baking dish.

Begin with 2 tortillas; alternate with next 4 ingredients to male 4 layers.

Top with cheese & olives.

Bake @ 350F (175C) for 10 min.

 

Serves 3-4 with sour cream & salsa.

*Cut any remaining tortillas into quarters, brush with oil & bake on cookie sheet @ 350F (175C) for 10 min until crisp.

Upon removing pie from oven, stick tortilla quarters, standing up, into top of pie.

**Don't drain beans. Tortillas will absorb liquid.

Turkey farmer's pie 

(This is great for any mashed potatoes, gravy or vegetables you may have left over and may be frozen for up to 4 months when prepared in an aluminum foil casserole. Do not heat before freezing. Cover with foil and seal in plastic bag. This tastes pretty good come a busy night in January-February.)

 

2 c chopped leftover turkey

2 c leftover vegetables (peas, corn, beans, carrots, etc.)

1 c leftover gravy (or gravy mix)

2 c leftover mashed potatoes (or frozen)

 

In ovenproof casserole combine turkey with vegetables & gravy.

Spread potatoes over top. Dot with butter, sprinkle with paprika.

Heat @ 350F (175C) for 35 min.

Serves 4
