Tuna Agro Dolce Recipe

A sweet & sour tuna dish straight from Italy

Chef Steve Siekierzynski of Trattoria Da Luigi in Royal Oak shares his recipe for Tuna Agro Dolce.

 Tuna steak, 7oz                                                                                                                        2 ea

Olive oil                                                                                                                                     2 T

Onion, julienned                                                                                                                        1 ea

White vinegar                                                                                                                           .5 c

Sugar                                                                                                                                        2 T

Kosher salt                                                                                                                               .25 tsp

Water                                                                                                                                        .33 c

 

 

Method:

 In a heavy-bottomed pan, heat half of the olive oil and place the onions in. Saute onions for a couple of minutes then add the water while reducing the heat to ‘low'. Cook the onions until desired softness is acquired. Once this happens, place the vinegar and sugar into the pot with the onions and turn the heat on ‘high' until the sauce has reduced to the proper consistency. Turn the heat to ‘off'.

 In a separate pan, place the remaining oil and allow the pan to heat up to the point that it begins to smoke. At that point, gently lay in the tuna steaks. Sear both sides for approx. 3 minutes each. Add the tuna to the pan with the sauce and allow to cook on ‘low' for a minute or two.
