DETROIT – Lactose Free Eggnog:

1 1/2 Cups Egg Beaters
3 Cups Coconut Milk
1/2 Cup Palm Sugar (Can be substituted with Brown Sugar)
1 1/2 tsp Cinnamon
1/4 tsp Nutmeg
1/2 tsp Vanilla Extract
Pinch of Thai Chili Powder sprinkled on top.
A couple cinnamon sticks.

Combine ingredients (except Thai Chili Powder) in blender.  Blend to desired consistency making sure to completely dissolve the Palm Sugar.  Pour into glasses and garnish with a pinch of Thai Chili Powder and a cinnamon stick.

Makes 6-8 small holiday glasses.

Low Sodium Thai Lettuce Wraps

1/4 Cup Chopped Water Chestnuts
1/4 Cup Shredded Carrots
1/3 Cup Chopped Red Peppers
1/2 Cup Chopped Green Peppers
3/4 Cup Chopped Precooked Chicken
3-4 Bib Lettuce Leaves

1 tsp Fresh Minced Garlic
1/8 Cup Low Sodium Soy Sauce
1/2 tsp Rice Wine Vinegar
1 tsp Sriracha
Pinch of Brown Sugar

Heat up a small amount of water in saute pan or wok and add minced garlic, veggies and chicken.  After steaming for a few minutes add Soy Sauce, Rice Wine Vinegar, Sriracha and Brown Sugar.  Stir fry for a few more minutes until vegetables are tender.  Serve mixture in a small bowl with lettuce on the side.

Makes 3-4 lettuce wraps.
