KIND and Strong Appetizer Tray

· 8 KIND and Strong Bars broken into small pieces
· 1 package of low fat cheese cut into 1" pieces

Touchdown Trailmix
Ingredients
· 6 cups low fat popcorn
· ½ cup peanuts
· ½ cup raisins
· 1/3 cup melted dark chocolate chips
Directions
· Combine dry ingredients in a Tupperware container
· Melt chocolate chips in a microwave safe dish (approximately 60 seconds), stir and repeat until they become runny.
· Drizzle chocolate over popcorn mixture, cover and shake until coated.
· Place in the refrigerator for 20 minutes to harden.
Turnover Turkey Chili
Ingredients
· 1 pound ground white meat turkey
· 1 can red kidney beans
· 1 can diced tomatoes
· 1 packet chili seasoning mix (or desired spices)
· Cooking spray
Directions
· Spray a non stick pan with cooking spray.
· Brown the turkey meat until cooked through.
· Add beans, tomatoes and seasoning packet and simmer on low heat, covered for an additional 10 minutes
· Serve
Edible Football Field
Ingredients
· 2 cans vegetarian refried beans
· 1 16 oz container of low fat sour cream
· 1 16 oz jar of salsa
· 8 oz shredded reduced fat cheddar or Mexican blend cheese
· 12 oz guacamole
· Scallions
Directions
· Using a 9x11 pyrex dish, layer ingredients
o Refried beans
o Sour cream (save small amount to use as decoration)
o Cheese
o Salsa
o Guacamole
· Using a pastry tool, pipe football field lines on to the guacamole
· Create endzones using chopped tomatoes and chopped scallions
· We created goalposts out of the scallions and toothpicks!
Brussel Sprout Sliders
Ingredients
· 4 cups of halved brussel sprouts
· ¼ cup olive oil
· 1/8 cup balsamic vinegar
· Kosher salt
· Black pepper
· 2 whole Vidalia onions, cut into 2 inch pieces
· 2 tsp table sugar
· 1 package of low fat provolone cheese
· Toothpicks
· Cooking spray
Directions
· Preheat oven to 400
· Spray a baking pan and place brussel sprouts inside
· Drizzle with olive oil and balsamic vinegar, salt and pepper to taste
· Roast in a 400 degree oven for about 20-30 minutes
· Set aside to cool
· Cut cheese into ½ inch square pieces and set aside
· In a separate pan, using a small amount of olive oil begin to cook the onions.
· Once they start to brown, add sugar and ½ tsp kosher salt until they carmelize completely.
· Construct sliders by taking a half of a brussel sprout, topping with a little onion and a couple squares of cheese and lastly top with other half of brussel sprout. Use a toothpick to hold them together.
