Ingredients:

2          cups               Beef stock

2          cups               Tomato Juice

2          cloves             Garlic, minced

1/2       cup                 Green onions, diced fine

1/2       cup                 Red bell peppers, small dice

1/2       cup                 Yellow bell peppers, small dice

1/2       cup                 Green bell peppers, small dice

1/2       cup                 Celery hearts, small dice

3/4       cup                 Cucumbers, peeled small dice

3/4       cup                 Tomatoes, fresh diced

1/3       cup                 Olive oil. extra virgin

3          Tbls.                Balsamic or red wine vinegar

 

As needed                 Salt and Pepper to taste

Few Dashes             Lee and Perrins Worcestershire sauce

Few Dashes             Tabasco sauce

1          Tbls.                Caraway seeds, roasted and ground

 

Garnish with fresh avocado balls, celery hearts or cucumber with cilantro leaves.

 

Method:

  1. Mix all soup ingredients thoroughly and chill. Garnish appropriately.
  2. Allow to sit overnight to marry flavors and adjust season just before serving.
