DLicious: Israeli Couscous Salad


Cooking the Couscous
1 cup Israeli Couscous
1 1/4 cup water
salt to taste

Add water to pan and add a dash a salt, bring to a boil.  Once at a boil add cous-cous and turn burner to low, simmer couscous for 8 minutes stirring occasionally


1 medium cucumber
10 grape tomatos
1/2 cup of feta cheese
1-2 cups of diced chicken

Cut up the cucumbers, tomatoes, and onion (it works best if they are quartered) and throw them in a big bowl. Throw the chicken in, and toss that in the bowl.  Next dump the cooked couscous into the bowl and mix it all up.  Lastly toss in and mix the feta cheese with everything.

*Add as little or as many vegetables as you want, there is no science behind it*


zest of 1 lemon
juice of 2-3 lemons (or 1/2 of lemon juice)
2 cloves of garlic (minced)
1/2 olive oil

Mix all ingredients up, and whisk well.

Pour dressing over salad, and voila Couscous salad.
