Cherry Cheesecake

  Trading up to 2% cottage cheese and replacing some of the whole eggs with egg whites makes this cheese cake much healthier!

2 HONEY MAID Chocolate Grahams, crushed (about 1/3 cup) NuVal- 24

2 cups  BREAKSTONE'S or KNUDSEN 2% Milkfat Low Fat Cottage Cheese NuVal- 31

1 pkg.  (8 oz.) PHILADELPHIA Neufchatel Cheese, softened NuVal- 21

½ cup  plain nonfat yogurt NuVal-100

3 Tbsp.  sugar, divided NuVal- 1

2 Tbsp.  flour NuVal- 77

1 tsp.  vanilla

1 egg NuVal- 44

2 egg whites NuVal- 59

2 tsp.  MINUTE Tapioca NuVal- 4

1 cup canned pitted tart cherries in water, drained, juice reserved NuVal- 96



1. Heat oven to 325ºF.

2. Sprinkle crumbs onto bottom of 9-inch springform pan.

3. Process cottage cheese in processor until smooth. Add Neufchatel, yogurt, 2 Tbsp. sugar, flour and vanilla; process until well blended. Add egg, and egg whites 1 at a time, pulsing after each just until blended. Pour over crumbs.

4. Bake 40 to 45 min. or until center is almost set. Run knife around rim of pan to loosen cake; cool 1 hour before removing rim. Refrigerate 4 hours. Meanwhile, bring 1/3 cup reserved cherry liquid, tapioca and remaining sugar to boil in large saucepan on medium-high heat, stirring constantly. Simmer on medium-low heat 2 min. or until thickened, stirring constantly. Gently stir in cherries. Refrigerate until ready to use.

5. Pour sauce over cheesecake just before serving.
