DETROIT - From Meijer Healthy Living Advisor Tina Miller.
Using Meijer Basics Whipped Dressing and substituting buns with lettuce leaves make this delicious recipe a great option for a light lunch!
Makes 2 servings

1/2 cup Meijer Basics Whipped Dressing - NuVal - 20
1 tablespoon lemon juice
1/4 teaspoon ground black pepper
2 cups chopped, cooked chicken breast - NuVal - 31
1/2 cup blanched slivered almonds - NuVal - 76
1 stalk celery, chopped - NuVal - 96
2 large lettuce leaves - NuVal - 82

1. Place almonds in a frying pan. Toast over medium-high heat, shaking frequently. Watch carefully, as they burn easily.
2. In a medium bowl, mix together dressing, lemon juice, and pepper. Toss with chicken, almonds, and celery.
3. Fill lettuce leaves with salad mixture. Roll tightly and enjoy!
