Chorizo, potato, green chile omelet

Eggs usually cost a dollar for a half-dozen, and they are a good source of protein.

DETROIT - Here's a quicker lighter meal from Meijer Healthy Living Advisor Tina Miller.

Chorizo, Potato and Green Chile Omelet

6 ounces fresh Meijer chorizo sausage
1 small red onion, chopped NuVal™ 93
3 cups Meijer frozen Southern-style hash browns NuVal™ 93
1 (4 ounce) can chopped green chiles, un-drained NuVal™ 22-30
1 package Meijer 2% milk shredded Mexican cheese NuVal™ 22
4 Meijer large whole eggs NuVal™ 33
8 egg whites
½ cup Meijer sour cream NuVal™ 23
½ cup Meijer thick and chunky salsa NuVal™ 20

1) Heat oven to 350 degrees.
2) Cook chorizo and onions in medium ovenproof skillet on medium heat for 8 minutes or until chorizo is done, stirring frequently.
3) Add potatoes and chiles; cook 2 min., stirring occasionally.
4) Remove from heat. Stir in 1/2 cup cheese; spread to form even layer in skillet.
5) Whisk eggs and sour cream until well blended; pour over chorizo mixture. Top with remaining cheese.
6) Bake 25 min. or until center is set. Serve topped with salsa.
