Makes: 8 to 10 servings

2 avocados, peeled and mashed (or 1 ½ cups prepared guacamole such as Wholly Guacamole®)

2 tbsp. lemon juice

½ tsp. salt

¼ tsp. pepper

1 cup Meijer light sour cream

1/4 cup Meijer mayonnaise

1 pkg. Reduced sodium taco seasoning

2 cans jalapeño-flavored or green-chile flavored refried beans

2-3 tomatoes, chopped

1 can pitted black olives, chopped

1 large bunch green onions, chopped

1 (8-oz.) pkg. Meijer 2% milk shredded Cheddar cheese

1 bag TOSTITOS®

Chopped fresh cilantro-Optional Garnish

Directions:

1.       In a small bowl mix avocados with lemon juice, salt and pepper. (Skip this step if using guacamole)

2.       In another small bowl mix sour cream, mayonnaise and taco seasoning.

3.       Spread beans in an oblong dish or in individual disposable cups, and top with avocado mixture or guacamole. Top with sour cream mixture. Sprinkle with tomatoes, olives and onions.

4.       Sprinkle cheese on top, and serve with Tostitos®.

Orange Glazed Turkey Meatballs

Makes: 30 Meatballs (15 2-meatball servings)

Ingredients

1 egg

1/4 cup low fat milk

1/2 cup Meijer plain bread crumbs

1 teaspoon salt

1/2 teaspoon McCormick® Poultry Seasoning

1/4 teaspoon McCormick® Black Pepper, Ground

1 1/2 pounds ground turkey

1 tablespoon Meijer olive oil

1/2 cup Meijer Naturals chicken broth

1 cup Meijer orange marmalade

1 tablespoon white wine vinegar

1 pinch McCormick® Red Pepper, Ground

Directions

1. Beat egg and milk in large bowl. Stir in bread crumbs, salt, poultry seasoning and pepper. Add ground turkey; mix well. Cover. Refrigerate 1 hour. Shape into 1-inch meatballs.

2. Heat oil in large skillet on medium heat. Place meatballs in single layer in skillet. Cook until well browned on all sides. Remove meatballs from skillet. Set aside.

3. Mix orange marmalade, broth, vinegar and red pepper in skillet on medium heat. Bring to boil, stirring to release browned bits in bottom of skillet. Return meatballs to skillet. Reduce heat to medium-low; cook 10 minutes or until meatballs are cooked through and sauce has reduced to glaze consistency.

Sweet Potato Skins with White Chicken Chili

Makes: 16

Ingredients

8 small sweet potatoes washed and pat dry

1 Tbsp. Meijer Olive Oil

White Chicken Chili

2 cups shredded 2% milk cheese (sharp cheddar, pepper jack, or Monterey jack)

Optional toppings:  Light sour cream, diced green onion, tomato or avocado, or chopped fresh cilantro.

Directions:

1.       Preheat the oven to 400°.

2.       Brush the sweet potatoes with olive oil and place on a baking sheet and bake 35-40 minutes.

3.       Remove the sweet potatoes from the oven and allow to cool 10 minutes.

4.       Slice in half and then, leaving 1/2" of flesh and skin, scoop out flesh from center of potato (store for use another time as mashed sweet potatoes).

5.       Fill with the turkey chili and top with shredded cheese.   Return to oven to melt cheese, about 5 minutes.

6.      Top with optional toppings if desired and enjoy!

White Chicken Chili

Makes 4 (1-cup) servings

Ingredients:

2 tablespoons Meijer olive oil

1 1/2 pounds boneless skinless chicken breasts cut in 1/2-inch cubes

1/2 cup chopped onion

2 teaspoons McCormick® Cumin, Ground

1 teaspoons McCormick® California Style Garlic Salt with Parsley

3/4 teaspoon McCormick® Oregano Leaves

1/4 teaspoon McCormick® Chili Powder

1/4 teaspoon McCormick® Red Pepper, Ground

1 can (14 1/2 ounces) white beans, undrained

1 can (4 1/2 ounces) chopped green chiles, drained

1/2 cup chicken broth

Directions

1. Heat oil in large skillet on medium-high heat. Add chicken and onion; cook and stir 5 minutes or until lightly browned.

2. Stir in spices and remaining ingredients until well blended. Bring to boil. Reduce heat to low; simmer 10 to 15 minutes, stirring occasionally. Serve with assorted toppings, if desired.

Guacamole Salsa

Makes 2 1/4 cups or 18 (2-tablespoon) servings.

Ingredients

2 medium ripe avocados, peeled, pitted and chopped

1 package McCormick® Guacamole Seasoning Mix

1 medium tomato, chopped

2 tablespoons chopped red onion

1 tablespoon lime juice

Directions

1. Mix avocados, Seasoning Mix, tomato, onion and lime juice in medium bowl. Cover surface with plastic wrap.

2. Refrigerate at least 30 minutes or until ready to serve. Stir before serving. Serve with tortilla chips.

3-minute no-bake cookies

Makes: 36 cookies

Ingredients:

2 cups granulated sugar

8 tbsp. (1 stick) margarine or butter (Smart Balance Butter Sticks)

1/2 cup Meijer low fat milk

1/3 cup baking cocoa

3 cups QUAKER® Oats (Quick or Old Fashioned)

1.       In a large saucepan over medium heat, combine sugar, margarine, milk and cocoa. Increase heat to medium-high and bring to boiling, stirring frequently.

2.       Boil for 3 minutes, stirring frequently. Remove from heat.

3.       Stir in oats (if using Old Fashioned oats, cool mixture in saucepan 5 minutes).

4.       Drop dough by heaping tablespoons onto waxed paper. Let stand until firm, and serve.
