Salted cashew and pecan bars
Crust:
2 cups all-purpose flour
1/4 cup sugar
1/2 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon ground cinnamon
1 teaspoon vanilla extract
1 cup cold butter, cubed
Topping:
1 cup packed brown sugar
1 cup maple syrup
3/4 cup butter, cubed
2 cups salted cashews
2 cups pecans
1/2 teaspoon lemon zest (optional)
3 tablespoons heavy whipping cream
Line a 13 x 9 inch pan with parchment and grease
In a food processor, combine the flour, sugar, salt, baking powder and cinnamon and pulse to combine. Add the cubed butter and extract and pulse until the mixture resembles course crumbs. Press into the prepared pan and bake at 350? for 25-30 minutes or until golden.
In a large saucepan, combine the brown sugar, syrup and butter. Bring the mixture to a boil and simmer for 3 minutes. Remove from heat and stir in the nuts, zest and cream
Pour over the golden crust and bake for another 25-30 minutes or until filling is set. Cool on a rack. Using the parchment, lift the bars out, discard parchment and cut into bars.
