Ann Arbor restaurant uses spit-roasting technique

Spiedo makes a variety of flatbread sandwiches

A restaurant in downtown Ann Arbor is serving up Mediterranean flavors with a special cooking approach.

Spiedo uses the spit-roasting technique. Chef Brad Greenhill explained the meat is cooked on vertical rotisseries that rotate. The meat is layered vertically and shaved off the spit to be served.

Spiedo’s menu includes a variety of flatbread sandwiches made with griddled bread. The sandwiches can be made with ingredients like spit-roasted marinated chicken, spit-roasted spicy pork, and tofu. They are also made with shredded cabbage, pickled onions, and Spiedo sauce, which Chef Greenhill described as being “between yogurt and mayonnaise.”

Instead of a sandwich, diners can opt for a rice bowl, which is made with turmeric rice. Side dishes include roasted beets, charred cabbage, and other items.
