 Asian Style Stuffed Bell Peppers

 Serves 4

Ingredients

4 large red or green bell peppers (NuVal Score™ 96)

1 lb. Lean Ground Beef (90% Lean Ground Round) (NuVal Score™ 31)

 Old Recipe:  1 lb Ground Chuck Ground (NuVal Score™ 24)

1/4 cup chopped onion (NuVal Score™ 96)

1 15oz. can Tomato Sauce, divided (NuVal Score™   35)

2 tsp. peeled, grated gingerroot (NuVal Score™ 87)

1 tbsp. Meijer Worcestershire Sauce (NuVal Score™ 4)

1 tbsp. La Choy Low-Sodium Soy Sauce (NuVal Score™ 23)

            Old Recipe:  Regular Soy Sauce ((NuVal Score™ 9)

1 cup cooked Meijer Long Grain Brown Rice (NuVal Score™ 82)   

            Old Recipe: 1 cup cooked white rice (NuVal Score™ 57)

3 tbsp. chopped fresh parsley (NuVal Score™ 99)

Directions:

1.      Preheat oven to 350 degrees F.

2.       Cut stem ends from peppers; remove seeds.  Cook covered in boiling water (or microwave on high) for 1 minute.  Drain upside down on paper towels. 

3.      In skillet sprayed with nonstick cooking spray, cook ground beef and onion until beef is browned and no longer pink, about 10 minutes.  Drain fat. 

4.      Combine beef mixture, 2 tbsp. tomato sauce, ginger, Worcestershire sauce and soy sauce in large bowl.  Stir in rice, 1 cup of tomato sauce, parsley and salt and pepper to taste. 

5.      Stuff peppers; place upright in 2-quart casserole dish sprayed with nonstick cooking spray.  Spoon remaining tomato sauce over stuffed peppers. 

6.      Cover and bake 25 to 30 minutes or until heated through.
