Recipe: Tasty roasted rosemary potatoes
Fresh herb brings adds touch of class to potatoes
Fresh herbs are available year around in markets, but if you've planted a herb garden this summer, here's a sure hit for some easy roasted potatoes.
2 cups potatoes cut into 1-inch squares (larger is okay, they'll just take longer to cook)
1/4 cup chopped fresh rosemary
2 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon ground pepper
In a bowl, combine the potatoes, chopped rosemary, olive oil, salt and pepper. Mix thoroughly. Spread the potato mixture on a baking pan that has been coated with cooking spray.
Bake in a 350 degree oven for 30 minutes. Stir every 10 minutes for even browning.
