Research finds certain fruits, vegetables improve skin's appearance

FIFE, Scotland – According to a new study, the secret to more beautiful skin may be found in the produce aisle.

Researchers at the University of St. Andrews studied the impact eating more fruits and vegetables had on 35 volunteers' skin.   They evaluated the diet and skin-color of participants at the beginning of the study and after three and six weeks.

After six weeks, the researchers found participants who increased their consumption of fruits and vegetables had visible changes in their complexions, specifically a more rosy glow. Their skin was also judged to appear more "healthy" and "attractive."

Experts believe red and yellow pigments called carotenoids are responsible for the change.   Foods rich in carotenoids studied include carrots, yams, spinach, peaches, pumpkin, apricots, watermelons, tomatoes and pink grapefruits.

Researchers said the added benefits of more attractive skin could be an extra motivator when it comes to convincing individuals to eat more fruits and vegetables.
