Traditional Corned Beef Boxtie
Boxtie Recipe
6 cups Fry Mix
1 Quart milk
3 Eggs
1 cup of Potatoes
Tbsp Parsley
Salt and Pepper
In a medium size bowl whip your eggs and milk together
Add the Fry Mix to the liquid mixture and then fold in the shredded potatoes
Add a tablespoon of parsley and salt and pepper to taste.
On an oiled medium-low heat griddle or nonstick 10 inch frying pan, pour 6 oz of the boxtie mixture and cook until bubbly on top and golden on the bottom. Flip and cook until golden, about 2 minutes. Keep warm until serving. (Makes about twelve servings)
Corned Beef Boxtie Filling
4 oz. Cabbage
4 oz. Corned Beef
1 oz. Butter
2 oz. White Wine
Salt and Pepper
In a medium skillet, sautee the cabbage and corned beef in the butter. Deglaze with the white wine and then salt and pepper to taste. (Makes one serving)
