These muffins are a perfect on-the-go treat or hearty enough to bring to your next family gathering. They’re packed with blueberries, freshly squeezed orange juice, and a full cup of oats to help you make it to lunchtime without snacking. And they only contain a half cup of sugar in 24 muffins.

Orange Blueberry Oatmeal Muffins
3 Cups Flour
1 Cup Oats
½ Cup Sugar
4 tsp. Baking Powder
1 tsp. Salt
½ tsp. Baking Soda
1 Cup Oil
Zest of 1 Orange
1 Cup Orange Juice (Freshly Squeezed works the best)
3 Eggs
3 Cups Blueberries
Directions
Preheat Oven to 375 degrees
In a Large bowl Mix the dry ingredients of Flour, Baking Powder, Salt, Baking Soda, Oatmeal, and Sugar together
In another large bowl, Mix the wet ingredients of Oil, Orange Zest, Orange Juice, and Eggs together
Mix the Dry ingredients with the wet ingredients
Add in the 3 Cups of Blueberries
Mix everything together
Add batter lined muffin tins, the tins should be filled quite full
Before putting muffins in oven sprinkle a cinnamon and sugar mixture on top
Bake for 20 minutes or until golden brown
*For a version with less fat and less sugar, eliminate the sugar and the oil from the recipe and instead add 1 cup of unsweetened applesauce to the mix.
